Watermelon-Mint Cocktail

what I'm listening to:Shovels & Rope – O' Be Joyful

I love a good cocktail. My drink seems to change with the season and with the warm weather vibes teasing here in the pacific northwest the gin bottle has been dusted off from it's winter hibernation.

Since leaving the foodie-haven of ATL there have been more cocktails made in our home than ever. Below I'll share with you the one that's been in our glass most recently, and how to make it. I hope you enjoy!

You'll Need:

  • Ice
  • 1.5oz of gin
  • .5oz rhubarb syrup (we made ours so let me know if you'd like the recipe)
  • watermelon
  • a sprig of mint
  • a boston cocktail shaker
  • a strainer
  • Put 3-5 large ice cubes in the shaker. (Bust them open with a the back of a spoon in your hand first.)
  • Add the gin and the rhubarb syrup, along with 2 chunks of watermelon (a little smaller than the size of a pingpong ball)
  • Seal the shaker and shake vigorously for several seconds.
  • Pop the shaker's seal and carefully strain over ice into the serving glass. (I used spanish wine glasses here.)
  • Place the mint in the palm of one hand and firmly clap it once. This releases the oils and aromas.
  • Place the mint in the beverage. (feel free to swirl it once around)
  • Garnish glass with watermelon.
  • Enjoy
